This is my 'chuck it all in' waste not want not version of a much more in depth paella.
Serves 6 • prep time 10 mins • cooking time 35 mins
I tend to use whatever veg is nearly past it's best. You can also use any kind of rice just adjust the cooking time to account for your rice.
Today's veg was:
1 chopped onion
1 head of broccoli into florets
1 red pepper sliced
1 leek sliced
15 baby plum tomatoes quartered.
1 courgette sliced into half moons
2 teaspoons lazy garlic
1 teaspoon paprika
1 teaspoon turmeric
280g paella rice
1 litre veg stock (I use 3 stock cubes for extra flavour)
Salt and pepper
Glug of oil.
Oil the wok and then Chuck all the veg in and cook through for 5 minutes.
Add teaspoon of paprika and turmeric and generous seasoning. Stir.
Add 1 litre veg stock, bring to boil stir and then reduce to a simmer.
Sprinkle paella rice over the surface. Squish it down with a spoon, do not stir and then leave for 10 minutes.
Squish some more to ensure rice remains covered(ish) by liquid and cook for another 10 minutes. If your liquid is running low, add a little extra water.
Check the rice, should be see through with a slight bite.
Turn off heat and cover wok with clean tea towel. Leave to stand for 10 before serving! Done!
Serve with salad and bread.
