Quick dinner when you are low on ingredients

A quick and easy 15 minute meal, serving 6 for when you are low on ingredients and time!

Parboiled rice to serve 6

1 can chopped toms

1 can kidney beans

1 can adzuki beans

1 can chickpeas

1/2 can coconut milk

3 Generous handful frozen peas

1 teaspoon chilli powder

1 teaspoon thyme

1 teaspoon paprika

1 teaspoon garlic powder

Put rice on to boil, meanwhile add all ingredients to a separate large saucepan (I use my 5L pot) bring to boil and simmer.

Once rice is cooked, drain and add to the large pot, mix and serve!

Delicious with poppadoms or flatbreads.
