Really simple and easy dinner! Serves 6, 15 minutes -30 mins max. (Dependant on how long your rice takes)
2 field mushrooms sliced lengthways
2 red peppers sliced lengthways
1 onion sliced not chopped
2 teaspoons lazy garlic
75g rice per person
170ml veg stock per person
1 teaspoon ground cumin
1 tablespoon chilli powder
1 tablespoon paprika
Salt and pepper
Add rice and veg stock to a pan and bring to boil. Simmer until nearly cooked through then take off heat, cover and leave to rest.
Meanwhile chop veg, add to a wok with the garlic and a little oil, add the spices and season, stir and cook through.
Plate up with salad leaves, rice and veg and top with sliced avo. Done!
